The pulp of passion fruit can be preserved by heat processing and freezing. Passion fruit juice was pretreated with pectinase, centrifugation, and pasteurization.

The first step is to select and eliminate the pests, rotten, moldy and damaged passion fruit that affect the quality of the product. The next step is washing to remove impurities such as dust, soil, sand, reduce organisms attached to the shell, and reveal damaged parts on the surface of the fruit.

A manufacturing method of a passion fruit juice beverage relates to a manufacturing method of a pulp fruit juice beverage, which includes: passion fruit pretreatment, crushing, juice separation, ultra-fine processing, ingredient, degassing, homogenization UHT sterilization, filling and other main processes

Passion fruit juice is then centrifuged; air is removed to increase its longevity and it finally undergoes pasteurization. Heat treatment is the most delicate step in the processing of passion fruit juice, since volatile compounds are very temperature sensitive and starches are prone to gelatinization, temperature conditions should be chosen carefully. Different temperature and time combinations are used depending on the equipment used and the quality of the passion fruit juice.
